Will heat or acidity degrade noopept? (can I put noopept in my morning cup of coffee?)

Interesting. However my own anecdotal reports seems to differ. I used to only dose noopept sublingually and noticed some effects, but lately I have started to just capsule it or as OP asks just dissolve it in my morning coffee. The results have been great, in fact I prefer this method of administration to sublingual. It feels smoother some how. Maybe this is all placebo, but it still felt worth mentioning.

What dosage? Perhaps you were taking too much sublingually, and it was pushing you past the dose/response curve. Then when you moved to oral, it actually resulted in lower plasma concentration, which put you back into the good region of the curve.
Don't get me wrong, noopept is active orally. It just takes a higher dosage to reach the same plasma concentrations.
