Can you bake it into things like cookies? Does that degrade any of the ingredients?

Yes, you can absolutely bake with InfiniFiber. It will work great in cookies, muffins, energy balls, and similar applications. Most of the ingredients are completely heat-stable, including the probiotic! LactoSpore is a spore-former with documented >90% survival at 180°C baking temperatures, unlike regular probiotics. The one thing worth knowing is that the Solnul in the formula partially gelatinizes in a wet batter during baking, converting some of its resistant starch content into regular digestible starch. Letting your baked goods cool fully, or refrigerating them after baking, recovers some of that as retrograded RS3. For applications where you want to preserve 100% of the RS2, mix it into something that doesn't get heated (protein balls, overnight oats, yogurt, smoothies). But for cookies and other baked goods, the fiber totals and the probiotic all come through well.
