I know a lot of people take it as their anti-tolerance stack. Out of curiosity how much would the NMDA action of Uridine differ from that of Memantine?

That is presynaptic, not postsynaptic like memantine. The mechanisms are different. Tolerance seems to stem from excess calcium transmission through postsynaptic NMDA channels.

Got some uridine from a friend. he got it from absorb health, anyone have experience with them?

I have never tested their uridine, but we recently tested their Panax ginseng, and it was completely fake. ZERO ginseng of any species in the capsules, and ZERO ginsenosides. I would not trust a single thing from them.
