Caffeine-induced Bipolar Symptoms

I have been taking caffeine everyday for the last year or so at around 250mg every morning and have recently been experiencing symptoms of bipolar disorder. Within the last few weeks, I've had ultra rapid-cycling mood swings between hypomania and depression occurring once every few hours.
I have recently seized all use of nootropics to see if there was a possibility of it being substance induced but haven't discontinued caffeine until earlier today.
I'm not 100% sure on whether or not I have developed a mental condition or if this is a side effect of long-term caffeine use in moderate doses. I am hoping to get some answers because I really don't want to live the rest of my life like this.
Could someone explain if there is a possibility of this happening and if so, why?
Also, why do I experience waves of euphoria when completely sober?
I could be doing nothing at all and get struck with this feeling. Feels like an intense chill rolling down my neck.
EDIT: Apparently Vitamin B12 deficiency can cause manic mood swings and depression. This is most likely what happened since I've only been eating one meal a day.

Highly unlikely that it is the caffeine. You may just have late onset bipolar disorder. The euphoria when not on anything, followed by depressive states, fits with that. You should speak to a doctor about it.
