It's possible. It would be a multi-step process of hydrolysis, dehydroxylation, and decarboxylation. This process happens in your GI tract due to bacteria, which is why there is variability in how much is created in some people. A biochemical process should be possible, but a synthetic process might be as well. There is a patent out there for synthetically creating urolithins.
