Why does correcting a defiency feel very euphoric?

I have had choline and B12 deficiency. On both cases when I corrected my defiency with supplements I had massive rush of euphoria. It seemed to be similar to your average endorphin release (such as induced by food intake, achieving something or exercising), but lasted whole day and was much more intense. I have also heard other people experiencing this, so I suppose there is some common mechanism behind it. I would guess the mechanism exists because the brain is pleased with nutrients it has been missing and releases massive amounts of endorphins in order to enforce taking more of the vitamine/drug. Very interesting nonetheless.

would this be in a short enough time frame to be acutely noticeable?

Yes, absolutely.
