Why does correcting a defiency feel very euphoric?

I have had choline and B12 deficiency. On both cases when I corrected my defiency with supplements I had massive rush of euphoria. It seemed to be similar to your average endorphin release (such as induced by food intake, achieving something or exercising), but lasted whole day and was much more intense. I have also heard other people experiencing this, so I suppose there is some common mechanism behind it. I would guess the mechanism exists because the brain is pleased with nutrients it has been missing and releases massive amounts of endorphins in order to enforce taking more of the vitamine/drug. Very interesting nonetheless.

Yeah, I know about the Niacin flush, but it's rather dysphoric than euphoric. Makes you very itchy and occurs only on high (overdose) dose. What I speak is different thing and I have experienced it with all manner of vitamines when I was having a deficiency. It was most intense with choline and B12 (Methylcobalamin) though. I suppose this is also partly the reason why many people report that their first time (and only the first time) with Sulbutiamine was very euphoric although the compound itself can cause euphoria (being dopaminergic stimulant), but to a lesser extent than many reports from first time use state. Same type of experiences seem to be pretty common with choline sources too and when treating B12 deficiency.

B12 is used in the production of serotonin and dopamine. Correcting a deficiency can increase that production, causing downstream increases in those neurotransmitters.
