Vastly different Lion's Mane flavour

Currently on around 6 months Lion's Mane, I started with a water extract but later went onto a dual extract for the next 3 months. Didn't notice a difference between the two although they both helped my depression moderately. The taste differences are expected between those two but now I'm on my third bag of the exact same dual extract from the same seller and the texture and flavour is completely different.
The first bag of the dual extract I got tasted like metal and didn't have much of a smell which I figured was the alcohol. It made my mouth extremely dry and absorbed all moisture.
This second bag of the exact same product is completely different, as soon as I opened it I got hit by an intense smell, when I ate it the flavour was very strong and tasted like some kind of dried meat. The texture was also sticky and stuck inside my mouth.
Curious why the two bags are so vastly different and if one could be more beneficial than the other.

My supplier is Nootropic Source AU which is a newer company and not to be confused with the international one which is a completely different company. I do have some pictures of the last bag, it looks pretty similar to the current one despite the smell and taste. It's a dark brown colour. I don't believe there are any lot numbers on the bag.

No lot numbers should be a BIG red flag. How can any company track products without an identifying number? How can they do recalls if needed? If there are no lot numbers, that likely means they are doing no testing. I would not consume anything from them for that reason.
