What stops fat from being metabolized/absorbed in general though? How does this photo and fats immiscibility in water translate to the body? What’s the utility making it more water soluble?

It makes it much more bioavailabile on an empty stomach. Normal fish oil has varying bioavailability based on what you have eaten and when. Accelon doesn't require food for absorption, and its bioavailability is more consistent. This means you will get more acute and consistent effects with Accelon than other fish oils.
