Oops, used the wrong words. Well fish have very fluffy easily melting meat (so soft that you can eat it raw.) I am sure (still guessing) dolphin/mammal meat will be much more stringy like lamb/pork.

I think you may be right. After some Google searching, the images for whale and porpoise meat look like raw beef! Crazy!
