Is there any point, other than the ginger, of taking Alcohol Defense if you don't drink alcohol?
Would it be poisonous if you do, if the ethanol is not there for it to mitigate?

No, it certainly won't be poisonous. And yes, there are benefits without alcohol. We have actually had some people use it as a nootropic, sans alcohol. The ginger has some cognitive effects. The pyroglutamic acid also does. The succinic acid does, too. The P5P is something people also get good effects from, being the active form of B6. Even the dihydromyricetin has some interesting cognitive effects. However, I wouldn't really tell people to use Alcohol Defense as a nootropic. It's not really meant for that purpose. We are bringing out the ingredients we use in it as standalones as time goes on, though. That will let people experiment with them.
