I've been looking into the chemical composition of sauerkraut and made some quite interesting finds. What really caught my eye was that sauerkraut contains breakdown products of glucosinolates (GLS). When cabbage cells are disturbed during fermentation, myrosinase converts GLS into hydrolysis products that modulate CYP enzymes and have anti-inflammatory, antioxidant, DNA protective, and other benefits! These breakdown products include isothiocyanates (ITCs), thiocyanates, nitriles, and epithionitriles. (One ITC you may have heard of is sulforaphane.) For a number of reasons, it might be impractical for someone to eat sauerkraut or drink sauerkraut juice on a regular basis. So I was wondering if it would be feasible and of interest for you guys to bring out an extract, perhaps standardized to some hydrolysis product(s) of GLS. I believe this would represent an advance in the fields of nutraceuticals and postbiotics.

LOL! Hey everyone, we are going shut Nootropics Depot down for the day so that we can go to a cabbage farm. We'll do team building exercises, like cabbage tosses, cabbage bowling, no-handed cabbage passing, cabbage chopping, and E. coli testing! Actually, there is one person on my team that might like that. He's a cabbage enthusiast, much like yourself.
