That would be the filler/flow agent. It's silicon dioxide. It won't absorb water like the cordyceps. It is also white, which is the reason for the white specks. Nothing to worry about there.
Regarding the shrinkage, what sort of humidity was this kept in? There's got to be a serious amount of moisture for it to do that so quickly.
