What are DJs like deadmau5, tiesto, and Steve Angelo doing on stage during a show? Aren't all their songs already prerecorded?

There's always variations of what dj's do. Which is why I'm so impressed with a large bunch of them. For example, when I saw Joachim Garraud, dude was playing a keytar in his set. Madeon did this during his set -> http://www.youtube.com/watch?v=lTx3G6h2xyA.

At Armin only in Holland, he had an entire orchestra on stage playing one of his songs.
Another song he had his brother playing electric guitar while another played the keyboard!
Another song he had a live drummer and Benno De Goji playing the keyboard.
That show was amazing! Unlike any other electronic show I've been to. Not to mention it was a 9 hour set!
