Any guess on how much phosphatidylcholine one might get from the sunflower lecithin in your MicroMag product that used to enhance the absorption of the magnesium?

Not much. The lecithin is used to create the sucrose fatty ester lipid bilayer that surrounds the magnesium. It shouldn't have much choline at all.
