I'm cooking something with a gravy today and I want to experiment with tossing the daily serving of Cordyceps and Lion's Mane in. Doubt it'll change the flavour significantly at 1/20th and 1/10th of a teaspoon respectively.

Yeah, that should be fine. You are not going to get gravy hot enough to break down the actives. I might not bake with it, since that is done at higher temps, but mixing in gravy or hot liquids should be fine.
